I’m a total sucker for foods with great texture. That’s why I love a good chia pudding! I know most people are very polarised and either love or hate these little seeds, but I’m a fan!
Other than the great texture, and the delicious taste you can create (when using this recipe!) chia seeds are also an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium.
Best made the night before for maximum absorption, this is an awesome grab-and-go breakfast for the busy worker or hurried mum. Who said you can’t have chocolate for breakfast!
Time: 2 mins to make, overnight in the fridge
Serves: 1
INGREDIENTS:
- 1 cup of unsweetened almond milk
- 1 Tbsp raw cacao powder
- 1/4 cup chia seeds
- 2 tsp maple syrup
DIRECTIONS:
- Combine all ingredients in a blender and blend for 20 seconds.
- Transfer to a glass jar and place in the fridge overnight.
- In the morning, spoon into a bowl and top with a swirl of coconut yoghurt and some crunchy granola.
