My daughter is obsessed with sushi. I’m not talking about the lovely fresh stuff, I’m talking the crumbled and deep fried stuff! Oh dear.

I made these an an easy grab and go snack for her (and me), but decided they’d also go well on a salad.

 

 

These are also super tasty stuffed into a wrap of pita pocket. I used hummus as my condiment here, but some coconut yoghurt tzatziki would be gorgeous!

  1. Place rice in a pot with the veggie stock and bring to the boil. Reduce to low simmer and cook for 40 minutes, stirring occasionally.
  2. Remove from heat and leave to stand for 10 minutes.
  3. Add tahini, tamari and chia seeds and mix well. Leave until it's cool enough to be handled.
  4. When rice is cooled, form balls (this mix makes 8-10 balls) and roll in the sesame seeds. Transfer to the fridge for 30 minutes before eating.
