Isn’t this a weird time! Even though we technically have access to supermarkets during the lockdown, there’s a real hesitance to go for more than the absolute bare necessities.
It’s the most awesome time to start making things from scratch, and the easiest place to start is homemade granola!
This delicious chai spiced granola is easy, crunchy and deliciously spiced to satisfy any breakfast snob.
It’s super adaptable and you can use any nuts you currently have in your pantry and any added extras like chopped apricots, cranberries or coconut flakes.
It’s only lightly sweetened to keep the sugar level down, and makes about 6 cups of granola, so it should last you a while, even if you get obsessed and have it on repeat for a week!
Serve 1/2 to 3/4 of a cup with your favourite yoghurt and some diced fruit for a satisfying breakfast that will keep you full till lunch whilst you are either working from home or playing referee with the kids (or in my case BOTH!)
