Macadamia & Raspberry Easter Eggs

There is so much sugar consumed over Easter, so why not try your hand at making your own without the added sugar and trans fats. Make your own chocolate from scratch or melt down your favourite dark bar, either way, these are sure to please. Let me know if you give them a go! 

Ingredients:

  • 1/2 cup dark chocolate chips

  • 3 tsp salted macadamia or any nut butter

  • 3 tsp raspberry chia jam or your favourite jam (to make chia jam mix 1/4 cup mashed raspberries with 2 Tbsp chia seeds and a dash of maple syrup)

Directions:

  1. Melt chocolate in the microwave (30 seconds then stir and another 30 seconds) then coat the silicone Easter eggs mould with chocolate, ensure all sides coated.

  2. Place in the fridge to set.

  3. Remove and add 1/2 tsp nut butter and 1/2 tsp chia jam (ensure there is enough room for more chocolate on top!). Return to the fridge.

  4. Once firm, cover with rest of melted chocolate and smooth tops. Return to the fridge for a further 15 minutes to set.
