Raw Chocolate Brownies

Brownies are my kryptonite! Anyone else take an ooey gooey chocolatey brownie over anything else on offer?  I have a few brownie recipes on the website, but these brownies are raw, super fudgy and decadent. They come together in about 15 minutes and require ingredients you'll likely have on hand in your pantry right now.

Think: Walnuts, Dates, Cacao powder, maple syrup and coconut oil.  The icing layer gives these brownies the added something special, and make sure it's nice and thick, you won't regret it!  

These beauties are the perfect make-ahead treat to share and last well in the fridge for over a week.

I actually keep mine in the freezer....to try and make them last for one....and so I have to think before defrosting them!I actually gifted these ones to a friend who has a brand new baby, but I may have had one or two before I gave them away...okay maybe three ;) 

Brownie

  • 1+1/2 cup dates (soaked in boiling water for 10 minutes)

  • 2 cup walnuts

  • 1/2 cup raw cacao powder

  • 3 Tbsp hemp seeds (optional)

Icing

  • 3/4 cup raw cacao powder

  • 1/4 cup maple syrup

  • 1/4 cup coconut oil

Directions:

  1. Put dates in a small bowl and cover with boiling water. Line a 20x10cm loaf pan (or a brownie pan but it will be thinner) with baking paper.

  2. Place walnuts in the base of a food processor and whiz until fine and flour-like.

  3. Add cacao powder and hemp seeds and blend again.

  4. Slowly add soaked dates while the processor is turning, until the mix combines and the brownies has come together. It may form a ball in the food processor, but just press it down and keep processing.

  5. Spread the brownie mixture into the loaf pan and place in the fridge while you make the icing.

  6. In a small bowl combine cocoa powder, melted coconut oil and maple syrup. Whisk until creamy.

  7. Pour over the cooled base and spread evenly with the back of a knife. Sprinkle with extra walnuts and place in the fridge to cool.

  8. Once cool, slice and eat :)

You can keep the slice in the fridge for up to a week.
