Satay Veggie Noodle Salad

So we're in lock down with minimal ingredients and often bare fridges, so I whipped this salad up with what was in the bottom of the fridge! Tasty and healthy, it won't leave you bloated like a whole lunch box full of plain wheat noodles might. 

Delicious and healthy, a great way to up the nutrient content of your satay noodles!

Salad

  • 2 large zucchini, spiralised

  • 1 large carrot, spiralised

  • 1/2 packet rice noodles, cooked and cooled

  • 2 handfuls fresh basil leaves

  • 3 Tbsp roasted and salted peanuts

Dressing

  • 2 Tbsp smooth peanut butter

  • 1 Tbsp tamari

  • 1 tsp maple syrup

  • 1 Tbsp sweet chilli sauce

  • 1 tsp grated, fresh ginger

  • 1/4 cup water

  • 2 Tbsp coconut cream

Directions:

  1. Cook noodles to packet instructions. Set aside to cool.

  2. Spiralise zucchini and carrot and place in a bowl.

  3. Place all dressing ingredients in a bowl and mix well until creamy.

  4. Add cooled rice noodles to the veggie noodles and peanuts, then drizzle with satay dressing and top with basil leaves. Transfer into two lunch boxes for the next day or enjoy fresh.
