Superfood Muesli Bars

Got littles asking for a gazillion snacks a day?? Let me help you out.

Make this tomorrow and itโ€™ll fill a serious bottomless pit ๐Ÿ˜‚. Packed full of nuts, seeds, oats and sweetened purely with dates, the chocolate topping is optional but delicious!!Let me know how you go!

Ingredients:

  • 1 cup dates, soaked for 5 mins in boiling water

  • 4 Tbsp nut butter (I used cashew)

  • 2 Tbsp melted coconut oil

  • 1/2 cup sunflower seeds

  • 1/2 cup pumpkin seeds

  • 1/4 cup hemp seeds

  • 1 cup oats

  • 2 Tbsp flaxseeds

  • 2 Tbsp sesame seeds

  • 1 Tbsp chia seeds

  • 1/2 cup roughly chopped almonds

  • 3/4 cup dark chocolate chips, melted (or 200g dark chocolate)

Directions:

  1. Line a 20cm x 20cm slice tin with baking paper and set aside.

  2. In a food processor combine dates, nut butter and coconut oil and blend until combined (It may form a giant ball but stop blades and spread out again to continue mixing).

  3. Remove blade from processor, then add all remaining dry ingredients, except chocolate, to the bowl and combine until all dry mix is covered with date paste.

  4. Press mixture into lined tin and set aside.

  5. Melt chocolate, then drizzle over base spreading evenly.

  6. Transfer to the freezer for one hour before slicing and then storing in the fridge for snacks.
