Chocolate Chickpea Fridge Fudge

Oh my word, where have you been all my life??

Super easy and sooooo delish! Perfect after-dinner treat. 

Ingredients:

  • 1 400g can chickpeas, drained

  • 1 cup dates, soaked in hot water for 10 mins

  • 5 Tbsp raw cacao powder

  • 4 Tbsp cashew butter (or peanut butter)

  • 1/4 cup soy milk (or any plant based milk)

  • 1/2 cup choc chips, melted

  • 2 Tbsp hemp seeds, for decoration

Directions:

  1. Line a 20x20cm slice tray with baking paper.

  2. Put chickpeas, dates, cacao powder, cashew butter and soy milk in a blender or food processor and blend until smooth.

  3. Spread into your slice tin and use wet hands to press flat.

  4. Melt chocolate chips/buttons/drops then drizzle over the top and sprinkle with hemp seeds (or nuts) then place in the fridge for 4 hours or overnight.Slice and enjoy!
