Easy Pickled Veg

These easy pickled veg are delicious in summer alongside your BBQ and salad, and are WAY better for you than the store bought versions that were likely made 6-12months ago!Amazing to make when veggies are in season, so while cucumbers are $1.99, go pickle some!

Add these pickles to burgers, sandwhiches or salad bowls and tacos, seriously delish!

Ingredients:

  • 1 small carrot

  • 1/2 telegraph cucumer

  • 1 small red onion

  • 1 cup organic apple cider vinegar

  • 2 tsp organic coconut sugar

  • 1/2 tsp salt

Directions:

  1. Sterilize your jar(s) and set aside

  2. Julienne your carrots and cucumber (removing the inner of the cucumber), and finely slice red onion. Add vegetables to jar.

  3. Heat vinegar over slow heat, then add sugar and salt and stir until dissolved. Allow to cool.

  4. Add liquid to vegetables, seal jar and transfer to the refrigerator and leave overnight.

  5. Add to your favourite foods and enjoy

Will keep in the fridge for up to 3 weeks (can last longer but I prefer to use them in this window to maintain vitamin levels in veg).
