Green Goddess Dressing

Most of the green dressings online are packed with avocado and oil.

This is fine and very tasty, but not awesome to drizzle liberally on a salad if weight loss is your goal.  This dressing has all the creaminess you desire in a dressing, but no oil! The fat content comes from the tahini, which is rich in minerals such as phosphorus, lecithin, magnesium, potassium and iron. 

It's one of the best sources of calcium out there and is high in vitamin E and vitamins B1, B2, B3, B5 and B15!  With fresh herbs and their wealth of protective polyphenols — plant compounds with potent antioxidant and anti-inflammatory effects, this is one mighty nutrient boosting addition to any salad.  

Ingredients:

  • 2 Tbsp tahini

  • 1 lemon juice and zest

  • 1 Tbsp apple cider vinegar

  • 1/4 cup water

  • 1/4 cup fresh coriander, roughly chopped

  • 1/4 cup fresh parsley, roughly chopped

  • 1/8 tsp salt

  • 1/2 Tbsp maple syrup (optional)

Directions:

  1. Place all ingredients in a high-speed blender and blend until creamy.

  2. Pour into a glass jar and keep in the fridge for up to a week.
