Lamington Bars

I recreated the epic Blue Dinosaur Lamington Bar!

Plant based, grain free and with 5 simple ingredients, the trick to this one is to compact it down really hard and quick bake! Free from nuts so perfect for lunchboxes at school too!

Ingredients:

  • 1 cup dates (soaked in hot water for 10 mins)

  • 2 cups desiccated coconut

  • 3 Tbsp raw cacao powder or cocoa.

  • 1 tsp vanilla

  • 1/4 cup melted cacao butter or coconut oil

Directions:

  1. Soak dates and set aside.

  2. Meanwhile, line a loaf tin with baking paper (20x10cm). Preheat oven to 140 degrees.

  3. Add dates, vanilla and melted cacao butter to food processor and process well

  4. Add cacao powder and process again.

  5. Slowly add coconut until combined.

  6. Press mixture into loaf pan and use a glass to roll it completely flat and very firm. Place in oven for 8 minutes.

  7. Allow to cool then slice and store in the fridge.
