Rocky Road

Rocky road is such an indulgence, and this one is super easy to make and has no crazy mystery ingredients. Use the base chocolate recipe and go to town with additions. I'm not a fan of Turkish delight, so skipped that, but feel free to add popcorn, rice bubbles, glazed cherries, honey comb or peanuts. 

This is not pretending to be a health food by any means, but with no golden syrup, butter or fruit jellies in sight, it's a lot better for us than the original!

The tartness of the cranberries contrast the sweetness of the cookies and the chewy marshmallow is matched by the crunch of the almonds. Another pro tip would be to roast your almonds for EXTRA crunch factor! Enjoy this one guys x  

The ultimate indulgence, this rocky road is out of this world delicious!

Ingredients:

  • 1/2 cup cacao butter (or coconut oil)

  • 1/2 cup cashew butter (or almond butter)

  • 1/4 cup maple syrup

  • 3 Tbsp cacao powder

  • 1/4 cup cranberries

  • 6 x oreo cookies (or other biscuit), roughly chopped

  • 8-10 large vegan marshmallows, chopped (or normal if you're not plant based)

  • 1/4 cup almonds, chopped

Directions:

  1. Line a loaf pan with baking paper.

  2. In a small saucepan, add cacao butter, cashew butter, maple syrup and cacao powder and over low heat, stir until well combined.

  3. Remove from the heat and add 80% of your cranberries, cookies, marshmallows and almonds. Mix well.

  4. Pour mix into the loaf pan and then press the remaining 20% of ingredients evenly into the top of the rock road.

  5. Transfer this to the fridge for 2 hours before slicing and enjoying. Store in the fridge.
