Sunflower Protein Bars

I've been grabbing a few "protein" bars at the supermarket recently as I've been going post gym and getting hangry! (Note to self, do not go shopping hungry!)

Anyway, I figured it made more sense to whip up my own and tote them to the gym, so made these the other day and loved the chocolate and tahini combination with the crunch of the sunflower seeds. Completely nut free and refined sugar-free, they make the perfect 3pm pick-me-up or ideal lunch box filler.

“You can roll this mix into balls if you prefer (I've done this too), or make the slice like I did here.”

Ingredients:

  • 1+1/2 cups sunflower seeds

  • 1/4 cup pumpkin seeds

  • 2 Tbsp protein powder

  • 2 Tbsp raw cacao powder

  • 2 Tbsp hulled tahini

  • 2 Tbsp maple syrup

  • 1/4 cup melted coconut oil

  • pinch of salt

  • 100 g dark choc, chopped

Directions:

  1. In a food processor, place seeds, protein powder, cacao and salt and mix until seeds finely chopped (I like mine to stay slightly chunky for crunch).

  2. Add coconut oil, tahini and maple then pulse to combine.

  3. Roll into balls or press into slice tin and place in the fridge for an hour to harden.

  4. Melt dark chocolate and drizzle over the top!

Balls/slice will keep in the fridge for up to 2 weeks and in the freezer for 3 months.
