Sweet & Salty Peanut Butter Truffles

Super easy and unbelievably delicious, these will not last long I can tell ya!I made these as a gift for a girlfriend who's just had a baby. Yes, I know they're not your conventional lactation cookies but heck, sometimes the added calories make all the difference to our energy levels postpartum!  Let me know if you whip these up and how you like them.

If you're a PB fan, then of all the recipes on this website, for the effort involved, these are hands down the first one I'd try!  

Ingredients:

  • 3/4 cup peanut butter (smooth or crunchy)

  • 1/3 cup maple syrup

  • 1/3 cup cacao butter (or coconut oil)

  • 1/4 cup coconut flour

  • 1/4 cup almond flour

  • 100 g dark vegan chocolate, melted

Directions:

  1. Combine all ingredients (except the chocolate) in a bowl and mix until smooth.

  2. Place bowl in the fridge for 20 minutes to harden.

  3. Roll peanut mixture into ball and return to the fridge again.

  4. Melt chocolate over a double boiler and then roll ball in chocolate and place on a lined cookie tray.

  5. Refrigerate for 30-40 minutes until chocolate has hardened. Enjoy!

    Store in the fridge.
