Chocolate Chip Cookie Dough Bites

Here's another lock down friendly, minimal ingredient gem, using only 5 ingredients you're likely to have on hand!

I got the idea if the chickpea brine from a recipe by Deliciously Ella, as she swore it was the magic ingredient that created the cookie dough texture, she was right!  

Got an old can of chickpeas asking to be used? Go ahead and make these for the week ahead!  

5 ingredients, 5 minutes, happy mouths for the week!

Ingredients:

  • 1 cup dates, soaked in boiling water for 5 minutes

  • 3 Tbsp nut butter (I used cashew, but peanut or almond would be awesome)

  • 2 cups fine rolled oats

  • 1/4 cup dark chocolate chips

  • 1/3 cup chickpea brine (from 1 x 400g tin of chickpeas)

Directions:

  1. Place all the ingredients except chocolate chips in a food processor and blend until well combined.

  2. Remove blade and stir through the chocolate chips.

  3. Roll into balls and store in the fridge for 7 days.
