Coconut Rough

My Mum used to make a delicious coconut slice for our lunch boxes, but it was packed full of plain flour, butter, brown sugar and golden syrup. This version is packed full of healthy fats and natural sugars, and I'm 100% convinced it tastes better!  

Maybe something to save for making with your kiddos this school holiday? It'll be a sure hit I promise!  

Base

  • 2 cups desiccated coconut

  • 1/2 cup raw cacao powder

  • 1 cup dates, soaked for 30 mins in boiling water

  • 1/3 cup cacao butter (or coconut oil)

  • 2 Tbsp tahini or nut butter

Icing

  • 3 Tbsp coconut oil

  • 2 Tbsp raw cacao powder

  • 3 Tbsp maple syrup

Directions:

  1. Line a slice tray with baking paper. Drain the water from your soaked dates.

  2. In a food processor, place coconut, cacao powder, dates, cacao butter and nut butter.

  3. Process until combined then press into your prepared slice pan.

  4. In a saucepan, place oil, cacao powder and maple syrup and stir until oil has melted and it's combined.

  5. Pour over slice and place in the freezer for an hour before slicing and storing in the fridge.
