Chocolate Walnut Brownie with Avocado Frosting

I made this to nibble on this week as it’s birthday week! 🎉

Now to see if I can make it last until Wednesday 😂 Anyone else do this? Celebrate ALL week?? HehePromise this is the last walnut recipe for a while! But this slice is so delicious and will keep well in fine fridge too. You can substitute the walnuts for pecans or almond (meal) if you prefer, and use whatever you have to decorate.Chia seeds or desiccated coconut would also look cool in place of hemp seeds. What do you think? Will you make this one?

Walnut Brownie

  • 2 cups walnuts

  • 1+1/2 cup dates, soaked and drained

  • 1/2 tsp salt

  • 2/3 cup raw cacao powder

  • 1/2 cup coconut flour

  • 1/4 cup maple syrup

Avocado Frosting

  • 1 small avocado

  • 2 Tbsp cashew butter

  • 1/4 cup coconut cream

  • 2 Tbsp raw cacao butter (or coconut oil)

  • 3 Tbsp maple syrup

Directions

  1. Combine all brownie ingredients in a food processor and blend until dough is formed.

  2. Press dough into a lined 20x20cm slice pan and transfer to fridge while you make the frosting.

  3. Clean processor bowl then add frosting ingredients and blend until creamy.

  4. Pour over the brownie and place in freezer to set for an hour.

  5. Once set, decorate with melted chocolate, an extra walnut (optional) and hemp seeds if desired.

  6. Slice and store in the fridge for up to 4 days.
