Multi Seeded Meal Crackers

Everyone needs a favourite seeded cracker to whip up for the week, whether it’s a fancy antipasto plate or simply kids lunchboxes, these do the trick!I call them meal crackers coz they’re a meal in themselves!

Ingredients:

  • 1/2 cup almond meal

  • 1/2 cup pumpkin seeds

  • 1/2 cup sunflower seeds

  • 1/4 cup whole flaxseeds

  • 3 Tbsp ground flax

  • 2 Tbsp psyllium husk

  • 3 Tbsp chia seeds

  • 3 Tbsp hemp seeds

  • 1/2 tsp salt

  • 2 Tbsp olive oil

  • 1 cup water

Directions:

  1. Place all ingredients in a large bowl. Combine well. Mixture will be liquidy, but leave it for 5 minutes to firm up and congeal.

  2. Preheat the oven to 160 degrees and line a baking tray with baking paper.

  3. Pour mixture into tray and press flat with your hands (you may need to do this in 2 batches)

  4. Next take a second sheet of baking paper and place on top of the crackers. Use a rolling pin to roll flat so your crackers are 2-3 mm flat.

  5. Score your crackers with a knife in the designed size, then place in the oven for 45 minutes.

  6. Remove from the oven and wait 20 mins to cool before breaking into pieces and storing in an airtight container for 3-4 days.
